Capparis spinosa L. is a perennial plant with large white to pinkish-white flowers.
The shrub is native to the Mediterranean region, where it grows on walls or in rocky coastal areas.
Capers are the potted green flower buds of a Mediterranean shrub. The smallest are the best.
The fruits are also edible. As caper apples (cuncini) pickled sometimes found in the trade. Capers and caper apples pickled with salt should be soaked for twenty minutes before use. However, many capers are pickled with vinegar. The smallest flower buds are the best and are sold as “nonpareilles”. Slightly larger ones are called “surfines” and the ordinary “capotes fines”. Easy to sow and a very nice plant.
